Rolo Cake Mix Cookies

The little leprechaun that visited our house last weekend, left us with a huge pot of gold.  Well, not really…they were Rolos. =)  I remembered seeing an easy recipe using Rolos on Pinterest a few months ago (Buns in my oven) and decided to test it out.  We ended up with a delicious cookie..and the best part about them…my kids actually made these all by themselves…with only a bit of my assistance.

Ingredients:

  • 1 box of Devil’s food cake mix
  • 2 eggs
  • 1/3 cup of oil
  • Parchment paper
  • Rolos (we were able to make 18 cookies)
  • Powdered sugar

Directions:

Have the kids unwrap all the foil off the Rolos, and preheat the oven to 350 degrees.

While they were busy unwrapping, I got the ingredients ready for them.

Add the cake mix to a large bowl.

Then add 1/3 cup of oil and 2 eggs.  Mix all the ingredients together well.  I helped them a little with this part towards the end to make sure all the cake mix was incorporated.

 

Next you will want to separate the cookie dough in pieces that are about half the size of a golf ball.  Tell the kids to roll it into a ball, then flatten it out like a pancake. Then place a Rollo into the center of the dough.

 

Then have them roll the dough into a ball again.

These aren’t going to look perfect…but it really won’t matter since they will flatten out when you bake them.

Place some parchment paper on a baking sheet and bake them in the over for about 9-10 minutes.  I think I had mine in there for about 9 1/2 minutes.  Once they came out of the oven, I slipped the parchment paper with the cookies right off the baking sheet, and sprinkled some powdered sugar over them.
Yummy!  Please make sure you let these sit and cool for about 5 minutes…you don’t want the caramel burning anyone’s mouths.

If there are any left over for the next day…I recommend warming them up in the microwave a bit to soften the caramel again.
