I used to love cooking, but it’s hard to love cooking when you cook for a house full of picky eaters. I can never seem to please everyone. My husband loves pizza, my children do not. My daughter loves salmon, but my husband and son hate it. My husband and son will eat tacos, but my daughter won’t touch it. Never mind making spaghetti because neither of the kids will eat it. It’s just a frustration that I go through every single night. As I was browsing through Pinterest one day, I stumbled on this Slow Cooker Beef and Broccoli recipe by Divas Can Cook. What caught my eye were the words “family favorite” and from the few comments that were posted, many of them said their family loved it. And so I showed the recipe to my children and asked if they would be willing to eat this if I made it…and they both said yes! And guess what? My family loved it! We are definitely keeping this in our meal rotation…especially because it’s super easy to make.
Ingredients:
- 1.2 lbs flank steak, cut into strips
- 1/2 cup diced white onion
- 1 tsp crushed garlic (we bought the garlic in a jar from Trader Joe’s)
- 1 tsp minced ginger (we bought the ginger in a jar from Sprout’s)
- 1 cup chicken broth (or beef)
- 1/2 cup low sodium soy sauce
- 1/3 cup brown sugar
- 1 Tablespoon sesame oil
- 2-3 Tablespoons cornstarch
- 3-4 cups steamed broccoli (fresh not frozen)
- White rice
- Sesame seeds (to garnish)
- 1/4-1/2 tsp Red pepper flakes (optional)
Directions:
First take your flank steak and cut it up into little strips. Just a little tip: cut the strips into bite size pieces…it saves time from having to help your children cut up their meat during dinner time.
Add the flank steak and 1/2 cup of diced onion into the crockpot.
Next we added 1 tsp of crushed garlic and 1 tsp of organic minced ginger.
We then took a bowl and added 1 cup of chicken broth.
Next, add 1/2 cup of soy sauce,
and 1 Tablespoon of sesame oil. Stir all the ingredients together.
Pour the mixture into the crockpot and stir. Cook this on low for 3-4 hours. The time will depend on how tender you like your steak cooked. I ended up cooking mine for about 3 hours…I then added the cornstarch, and cooked it for another hour. While you are waiting for this, prepare your rice for cooking.
Add 2-3 Tablespoons of cornstarch to thicken the sauce.
Once the meat was cooked to my liking, I placed the broccoli in a microwaveable bowl, added a tiny bit of water, and steamed it in the microwave for 3-4 minutes.I then placed some rice in a bowl, added some broccoli, and topped it off with the beef. We garnished it with sesame seeds.
