Easy Gluten-Free Birthday Treats

The other week, one of my students had a birthday and the dad brought in some treats to celebrate.  They were delicious!  At first I thought they must be homemade, but as I tried to google a recipe that looked remotely similar, I just couldn’t find anything like it.  So the next day I asked the dad if he made them, or if not, which bakery were they from?  He told me they were from Trader Joe’s.  Now I shop Trader Joe’s pretty religiously, so initially I was shocked, because I had no recollection of seeing these cookies before.  He continued to tell me they were gluten-free, peanut and tree nut free, soy free… and he just slathered some left over frosting he had from the birthday party and  in between two cookies.

They were so good, I decided I needed to make some for my family…and while I was at it…I might as well share with my readers this super simple easy birthday treat that literally take 10-15 minutes to put together.  Well, I guess the amount of time really depends on how many you are making.  Each box comes with 12 cookies, so you will only get 6 treats out of them.  But it’s worth it!

Ingredients:

-Trader Joe’s Soft Baked Snickerdoodles
-Vanilla Frosting (or your favorite flavor)
-Food Coloring (optional)

Directions:

Place a couple scoops of frosting in a small bowl or bowls, depending on the number of colors you want.

Next, add the food coloring of your choice and mix well.snickerdoodles2

Here’s a picture of the cookies.  They are pretty moist and soft.snickerdoodles4

And finally, take two cookies, slather icing on one side, and then put the two cookies together.

Here’s what they look like finished.  I added the sprinkles just to make them look a little more festive, but they look cute even without the sprinkles.
